Matcha & Coconut Energy Balls
Makes 6-8 buttons - 10 mins prep
Great as a pre-gym snack or an afternoon energy boost. These energy balls are made with dates, coconut and a hint of matcha. Simple to make and easy to keep on hand, they’re a balanced, everyday sweet.

8 medjools
50g desiccated coconut
1.5 scoops plant protein (vanilla or unflavoured)
1-2 tsp matcha
1 tbsp nut butter (we used almond)
1 tbsp coconut oil
1 tbsp mylk to bind if needed

STEP 1.
If your dates are a bit dry, soften in warm water for 10 minutes, then drain.STEP 2.
Add all the ingredients into a food processor and blend until crumbly but sticky. The mixture is ready when it holds together when pressed.STEP 3.
Scoop around 1 tbsp per ball and roll in your hands to make a smooth ball.Pour a sprinkle of the desiccated coconut onto a plate and roll the ball in it to add extra texture.
Refridgerate for 20-30 minutes to firm up.
