Matcha & Coconut Energy Balls

Makes 6-8 buttons - 10 mins prep

Great as a pre-gym snack or an afternoon energy boost. These energy balls are made with dates, coconut and a hint of matcha. Simple to make and easy to keep on hand, they’re a balanced, everyday sweet.

    • 8 medjools

    • 50g desiccated coconut

    • 1.5 scoops plant protein (vanilla or unflavoured)

    • 1-2 tsp matcha

    • 1 tbsp nut butter (we used almond)

    • 1 tbsp coconut oil

    • 1 tbsp mylk to bind if needed

  • STEP 1.
    If your dates are a bit dry, soften in warm water for 10 minutes, then drain.

    STEP 2.
    Add all the ingredients into a food processor and blend until crumbly but sticky. The mixture is ready when it holds together when pressed.

    STEP 3.
    Scoop around 1 tbsp per ball and roll in your hands to make a smooth ball.

    Pour a sprinkle of the desiccated coconut onto a plate and roll the ball in it to add extra texture.

    Refridgerate for 20-30 minutes to firm up.

    • Medjool dates provide natural sweetness along with fibre.

    • Desiccated coconut adds texture and natural fats.

    • Full of plant protein for sustained energy.

    • Matcha brings its distinctive colour, flavour and small amount of caffeine, along with naturally occurring plant compounds found in green tea.
