Midnight Medjools

Makes 3 - 5 min prep / 25 min to set

Medjool dates filled with creamy nut butter and pistachio. Dipped in rich dark chocolate and topped with pistachio shavings. Simple, satisfying and designed for those moments when you want something a little special without the fuss.

    • 3 medjool dates

    • 2 tsp nut butter

    • 40g dark chocolate (we use 85%)

    • 10 shelled pistachios

    • Pinch of high quality sea salt

  • STEP 1 .
    Chop the pistachios finely.
    Slice the medjool dates lengthways and remove the seed.
    Using the opening, fill the medjool date with the chopped pistachios (saving some of the smaller shavings for topping).
    Then fill with the nut butter, making sure not to overfill.
    Close the dates back up to seal.

    STEP 2.
    Gently melt the dark chocolate in a heatproof bowl over simmering water, or in short bursts in the microwave, stirring until smooth.
    Dip the stuffed dates into the chocolate to coat.
    Top with the rest of the pistachio shavings and a small pinch of sea salt.

    STEP 3.
    Place on a lined tray or plate and chill in the fridge for 20-25 minutes, until set.
    Transfer to an airtight container in the fridge for up to 5 days.
