Bitter Sweet Chocolate Tofu Cremeux

Serves 3 - 5 mins prep

A smooth chocolate crèmeux made with silken tofu and dark chocolate, blended until rich and glossy. Light yet indulgent, it’s finished with a drizzle of olive oil, chopped hazelnuts and a pinch of sea salt for contrast. Easy to prep-ahead as well as nourishing and protein-rich - this recipe is perfect for dinner parties or midweek treats.

    • 300g silken tofu (must be silken, we use this)

    • 100g 70% dark chocolate

    • 3 tbsp chopped roasted hazelnuts, to serve

    • 2-3 tbsp extra virgin olive oil, to serve

    • Large pinch of high quality sea salt flakes, to serve

  • STEP 1.
    Add tofu to a blender

    Break up 90g of the chocolate in a bowl over heated water and stir until it melts, becoming smooth and silky.

    Add the chocolate to the blender with the tofu and blitz until combined.

    Pour into a tupperware or container and refridgerate to set, for 1hr or overnight.

    STEP 2.
    Once ready to serve, melt the remaining chocolate the same way as before.

    Once the chocolate is melted, add the hazelnuts to the chocolate bowl and mix together to combine.

    Remove the cremeux from the fridge and spoon onto 3 plates.

    Top with the chocolate covered hazelnuts, a drizzle of olive oil and a pinch of the flaky sea salt.
