Miso & Maple Granola Clusters

A sweet–savoury granola made with oats, nuts and seeds, lightly bound with maple syrup and coconut oil. A small spoon of white miso adds gentle depth, creating crisp golden clusters.

  • STEP 1.

    • Preheat the oven to 165°C (325°F).

    • Line a large baking tray with parchment paper.

    • In a small saucepan, heat the miso and coconut oil on a low heat. Once melted, add the maple syrup and vanilla extract and mix together.

    • Add to a large bowl with the oats and nuts/seeds and stir thoroughly to coat everything evenly.

    • Spread the mixture evenly onto the prepared baking sheet.

    • Bake for 25 minutes, don’t stir it so it clusters.

    • Once cool, transfer to an airtight jar or container.

    • Fibre-rich from the oats and nuts.

    • A mix of nuts and seeds add natural fats, plant protein and minerals.
