Miso & Maple Granola Clusters

A sweet–savoury granola made with oats, nuts and seeds, lightly bound with maple syrup and coconut oil. A small spoon of white miso adds gentle depth, creating crisp golden clusters.

200g GF rolled oats
100g nuts/seeds
1 tsp white miso
4 tbsp maple syrup (we use Nick’s maple flavoured fibre syrup)
1 tbsp coconut oil
1 tsp vanilla extract

STEP 1.
Preheat the oven to 165°C (325°F).
Line a large baking tray with parchment paper.
In a small saucepan, heat the miso and coconut oil on a low heat. Once melted, add the maple syrup and vanilla extract and mix together.
Add to a large bowl with the oats and nuts/seeds and stir thoroughly to coat everything evenly.
Spread the mixture evenly onto the prepared baking sheet.
Bake for 25 minutes, don’t stir it so it clusters.
Once cool, transfer to an airtight jar or container.
