Winter Glow Slaw

A crisp, colourful slaw loaded with red cabbage, kale, carrot and a walnut crunch tossed in a balsamic vinaigrette.

Prep ahead:
Steps 1-3 can be made in advance.
Dress the salad just before eating to keep it fresh and crunchy.

    • ½ sweet potato, cubed

    • ½ red cabbage head, thinly shredded

    • 1 large handful kale, shredded

    • 1 carrot, julienned

    • 4-6 walnuts, roughly chopped

    Dressing

    • 2 tsp olive oil

    • 2 tsp balsamic

    • Pinch of salt & pepper

  • STEP 1.
    Preheat the oven to 220°C (425°F).
    Spread the cubed sweet potato onto one layer of a baking tray with a drizzle of olive oil.
    Once the oven is hot, put the baking tray into the oven for 20-25 minutes until crispy and tender. Leave to cool to one side.

    STEP 2.
    In a large mixing bowl, combine the cabbage, kale and carrot.
    Transfer to an airtight container and store in the fridge until ready to assemble.

    STEP 3.
    In a small jar, whisk or shake together the dressing ingredients until emulsified.
    Seal and store in the fridge until ready to serve.

    STEP 4. WHEN READY TO EAT
    Toss the slaw with the dressing and top with the protein.
