Golden Apple Breakfast Crumble

A gently warming breakfast designed to ease you into the day. Soft, cinnamon-stewed apple forms the base, layered with creamy coconut yoghurt and finished with a spoon of nut butter and crunchy super-seeded granola. It can be prepared in advance and enjoyed at home or taken with you to work on busy mornings.

    • ¼ cup Super-Seeded Granola (pre-made, see recipe)

    • 1 apple, chopped

    • ½ tsp cinnamon

    • 200g coconut yoghurt

    • ½ tsp nut butter, optional for topping

  • STEP 1 .
    Heat a small pan over low heat.
    Add the chopped apple, cinnamon, and a good splash of water to prevent sticking.
    Cook gently, stirring occasionally, until the apples are soft and slightly caramelised.
    Set aside to cool.
    Once cool, divide the stewed apple mixture evenly into two jars or containers and store in the fridge until ready to assemble.

    STEP 2.
    If eating at home use a bowl, if taking to work you can keep it in the jar.
    Add half of the coconut yoghurt on top of the apple layer in one of the jars.
    Drizzle the nut butter, if using.
    Sprinkle with Super-Seeded Granola for a crunchy crumb.
