Quick Pink Pickles

A simple jar of thinly sliced red onion quickly pickled in apple cider and white wine vinegar. Bright and tangy, designed to add colour, crunch and balance to bowls, salads and warm dishes.

    • 1 red onion, thinly sliced

    • 120ml (½ cup) water

    • 60ml (¼ cup) white vinegar

    • 60ml (¼ cup) apple cider vinegar

    • Pinch of salt and pepper

  • STEP 1.
    Add the thinly sliced red onion to a mason jar that is large enough to fit a pint of liquid.
    Put the jar in the sink in case you spill any liquid when you decant.

    STEP 2.
    Heat the water, vinegars, sugar, salt and pepper in a small saucepan.
    Gently simmer and then pour the liquid over the red onions.
    Push down the onions with a spoon so they are fully submerged.

    STEP 3.
    Once cool, put the lid back on the jar and put in the fridge. Consume within a week.
